I am requested by contacts in Asia to post my work on Hamburgers.
However, I am in the opinion that during the yearend festival season, I should post more traditional Asian dish, so that all on the net could get to know more about the food culture during the family re-union season.
That is why I am putting up this image.
The golden color balls are deep fried fish balls.
The brown color balls are the grounded beef & beef tandon balls.
The egg noodles are used here. Please remember to use fresh noodles not the dry noodles, the taste is difference. Also, the fresh noodles must be boil for 30sec then put in the ice cold water for 1 min. before put back to the boil water to boil for another 30sec. For this process, the noodles can be tender.
Soup need to be cook separately & boil it, as soon as the noodles are really, just add soup & ingredients.

This is my own creation.
The pig hock is braised for 3 hours under slow & low fire 文火. The advantage of cooking under slow fire is the food would not be to heaty for our body system.
This also to keep the house warm when you cook meat this way during winter.
I have filter out the fat after cooking. That is why you hardly see fats around.
Japanese Udon is used cook separately in the boiled water for 3-5 min.

This is in respond to the request of my fans for the healthy way of cooking & eating vegetable.
Here you see the simple way to do it. Just boil the water in pot & once water is boiled, add straw mushroom 1st, then vegetable green; then the needle mushroom last.
The whole process only take les than 3 minutes.
Remember to put some salt & a tea spoon of olive oil before you put the green vegetable into it, so that the vege would gives the lust green color & crispy!!

This dish is actually a little international version.
The fresh mushroom is from Japan, I use chicken breast & cut it to small cubes; same for the beef loin too.
I grounded the garlic & giner & Onion to paste, The celery is Chinese version.
If you wish, you can add oyster sauce with it.
For those vegetarian's you just use the vegetable & without the meat.

This is in reply to my fans & proteges request on the best way to do "Chicken Chow Mien"!!
Remember; all commercial image are of cosmetic nature, but my work are both for presentation on images as well as the presentation of "What You See Is What You Eat -WYSIWYE".
Now, come to the part of selecting Noodles; I have used this Noodles that make in L.A. Monterey park area. To make the noodle tender, you need to deep the noodles into the ice cold water after the 1st boil ofr say about 4 mintues. then reboil it to 2 mintues before you fried or use it for soup.
In this presentation, I have stir fried the chicken Breast separately as the restaurant do. But in the real life when I serve this dish, I would prefered to stir-fried the chicken with vegetable then mix the fried noodles into & mix well; so that the noodles would be coated with the sweetness of the ingredients.
The egg is the last thing I lay on the dish before the shooting.
