1/2 large Spanish onion
1 tablespoon olive oil + as needed for drizzling
6 oz shitake mushrooms, stemmed
1/2 C chicken (or vegetable) stock
salt & pepper to taste
2 skinless boneless chicken breasts
1 tablespoon herbes de Provence
1/2 cup white wine
(I also add a little vegetable stock)
