The name Aigues-Mortes means dead or stagnant water and refers to the marshes and ponds surrounding the village which never had potable water.

The salt works of Aigues-Mortes are the biggest and most important ones in the Occitaine Region. They are known worldwide and recognized for the quality of their fleur de sel.
