White pumpkin, yellow squash, white scallop squash.
White pumpkins are quite similar cooking-wise to butternut squash. You can use them in a number of ways from salad, soup, and casserole to waffles, muffins, and quesadillas!
You can easily substitute yellow squash for zucchini. They are great in stir-fry and sautéed vegetables.
Scallop squash have a soft skin, so they can be eaten raw, but are more commonly roasted, grilled or used in stir fry.
