Recipe:
1 head cauliflower, cut into florets
1 bunch rainbow carrots, trimmed
Salt, pepper
3 tsp basil
5 threads saffron, bloomed in 1 tbsp extra virgin olive oil

Mix the above ingredients and place on baking sheet - roast 20-25 minutes.

2 cups cooked Israeli couscous
1 bunch kale, torn
1 clove garlic, minced
Salt, pepper
Handful dried cranberries
2 tsp extra virgin olive oil

Toss the couscous with the kale and saute in pan with oil, garlic and cranberries. Season to taste with salt and pepper. Toss in the cauliflower and carrots.

and that's a chipotle black bean burger...recipe to follow.
Here is the recipe...just combine the ingredients and form patties. You can add different veggies as well such as corn or broccoli---make it your own!
1-15oz can black beans, drained & rinsed
1/4 small red onion, roughly chopped
1 canned chipotle pepper in adobo sauce, plus 2-3 teaspoons adobo sauce
2 garlic cloves
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 cup bottled chunky salsa of your choice
3/4 cup panko bread crumbs
1 teaspoon ground flax seed mixed in 2 teaspoons water

I had raspberry.
I had Frangelico.
It was hot.
Recipe to follow....all vegan.

Recipe:
2 cups soy creamer
1 cup Mimic Cream
1/2 cup raw sugar, plus
1/4 cup raw sugar
Egg Replacer for 4 eggs mixed with 4 tablespoon water
1/2 teaspoon vanilla extract
1 large vanilla bean, scraped
1/4 cup Frangelico
3/4 cup vegan hazelnut spread (recipe a previous post)
1/2 cup shaved dark chocolate

Combine milk, cream, and 1/2 cup raw sugar in a 2-quart glass bowl. Cook in the microwave on high heat for 10-12 minutes, whisking with a wire whisk every two minutes, until mixture just begins to boil; set aside.
In mixer,combine the egg replacer with 1/4 cup sugar until thickened, about 4-5 minutes.
Gradually pour 1/2 cup of the warm milk mixture into the "egg" mixture, whisking constantly; then use a heatproof spatula to scrape the warmed mixture back into the bowl of warm soy milk, whisking thoroughly to combine.
Heat mixture in microwave on high heat for about 3-6 minutes, whisking every minute or two, until mixture thickens enough to coat the wire whisk
Remove from microwave and stir in the vanilla extract, vanilla seeds, Frangelico, shaved chocolate and vegan nutella until it dissolves; mix thoroughly.
Let sit at room temperature until cooled, then cover and refrigerate several hours or overnight until mixture is completely chilled. Pour into an ice cream maker and process according to manufacturer's instructions.
