Made with fried mashed plantain, they're much like banana fritters, except not flat, but 3D, and with a creamy / custardy filling.

Thanks for the recipe, KAYTAYQT!

My mom does whatever kind of birthday cake I want each year, and this year, having seen red velvet cake on KAYTAYQT's photostream, which I'd never heard of before, I decided to request it. (It appears to be mostly an southern U.S. dessert, and for whatever reason, unlike most American foods, never really caught on in Canada, except for a period of time in the 1940s through the 1950s, when it was made for and sold at Eaton's department store; though it is true that many southern U.S. foods take longer, if ever, to make it this far north; e.g. only in recent years have sweet potatoes, in their various forms, and various dishes containing them, taken off up here.) KAYTAYQT was kind enough to give me the recipe, so I passed it along to my mom.

A very rich, moist, old-fashioned cake; rather dense and filling, too. Flavour hard to describe; somewhat chocolaty, but not entirely. I quite like it.
