This is a pot of posole rojo (red posole). This is a stew of pork, onion, hominy (the modern cooked version of corn kernels soaked in an alkaline solution to tenderize the kernels, found canned in any southern US grocery store), chicken broth (or pork broth if you can find it), lots of ground red chile, and a bit of oregano and cumin. It is simmered until the pork is pull apart tender. This is one of the stew type of dishes I rotate through on New Years Day. The name posole comes from the Aztec word for this processed corn, and this dish is cooked with some variations all over Mexico and the Southwestern US.

This is a puzzle a friend gave us for Christmas. We managed to get the border worked over a few days, the rest are currently in a higgledy-piggledy state. This one is going to take a while, lol. But it is a fun piece of art, so we will enjoy it.

This is the Packery Channel, between North Padre and Mustang Islands in Corpus Chjristi, Texas. It is an opening for small boats to travel between the Gulf of Mexico (the open water in the background) and the Laguna Madre, the body of water separating these barrier islands from the mainland.

This is the JFK Causeway, a bridge spanning the Laguna Madre between the mainland and Padre Island in Corpus Christi, Texas. The Laguna Madre at this point is also part of the Intracoastal Waterway between Corpus Christi and Brownsville, Texas.
